Ingredients:

  • Rethink Foods Piri Piri Tempeh (frozen, in cube form)
  • Cooked quinoa or brown rice: 2 cups
  • Baby spinach or mixed greens: 2 cups
  • Cherry tomatoes: 1 cup, halved
  • Cucumber: 1, sliced
  • Avocado: 1, sliced
  • Red bell pepper: 1, thinly sliced
  • Olive oil: 1 tablespoon
  • Lemon juice: 1 tablespoon
  • Salt and pepper: to taste
  • Fresh herbs (like cilantro or parsley): for garnish
  • Yogurt or hummus: for dressing (optional)

Instructions:

  1. Heat the Piri Piri Tempeh:
    • Take the frozen Rethink Foods Piri Piri Tempeh out of the freezer and let it thaw for a few minutes.
    • Heat a pan over medium heat. Add a little olive oil to the pan.
    • Once the pan is hot, add the Piri Piri Tempeh cubes.
    • Cook for 5-7 minutes, stirring occasionally, until the tempeh is heated through and slightly crispy on the edges. Set aside.
