Ingredients:

Mayonnaise or chutney (optional): as needed
Rethink Foods Tempeh Keema (frozen)
Bread slices (whole wheat, sourdough, or your choice): 4 slices
Butter or oil: for toasting
Lettuce leaves: 4
Tomato slices: 8
Cucumber slices: 8
Cheese slices (optional): 2 slices

Instructions:

  1. Heat the Tempeh Keema:
    • Take the frozen Rethink Foods Tempeh Keema out of the freezer and let it thaw for a few minutes.
    • Heat a pan over medium heat. Once the pan is hot, add the thawed Tempeh Keema.
    • Stir occasionally and cook for 5-7 minutes until heated through and slightly browned. Set aside.
  2. Prepare the Bread:
    • Heat a skillet or pan over medium heat. Spread a thin layer of butter or brush with oil on one side of each bread slice.
    • Place the bread slices, buttered side down, in the pan. Toast until golden brown and crispy. Repeat with all slices.
  3. Assemble the Sandwich:
    • Spread a layer of mayonnaise or chutney on the unbuttered side of two bread slices (if using).
    • Place a lettuce leaf on each of these slices.
    • Add a generous amount of the heated Rethink Tempeh Keema on top of the lettuce.
    • Layer with tomato and cucumber slices.
    • If using cheese, place a slice on top of the vegetables.
  4. Finish the Sandwich:
    • Top with the remaining bread slices, buttered side up.
    • Press down gently and cut the sandwich in half if desired.
  5. Serve:
    • Serve the sandwich warm or at room temperature. Enjoy with a side of pickles or a fresh salad.
