Ingredients:
- Rethink Foods Piri Piri Tempeh (frozen, in cube form)
- Cooked quinoa or brown rice: 2 cups
- Baby spinach or mixed greens: 2 cups
- Cherry tomatoes: 1 cup, halved
- Cucumber: 1, sliced
- Avocado: 1, sliced
- Red bell pepper: 1, thinly sliced
- Olive oil: 1 tablespoon
- Lemon juice: 1 tablespoon
- Salt and pepper: to taste
- Fresh herbs (like cilantro or parsley): for garnish
- Yogurt or hummus: for dressing (optional)
Instructions:
- Heat the Piri Piri Tempeh:
- Take the frozen Rethink Foods Piri Piri Tempeh out of the freezer and let it thaw for a few minutes.
- Heat a pan over medium heat. Add a little olive oil to the pan.
- Once the pan is hot, add the Piri Piri Tempeh cubes.
- Cook for 5-7 minutes, stirring occasionally, until the tempeh is heated through and slightly crispy on the edges. Set aside.
- Prepare the Base:
- In a large bowl, add the cooked quinoa or brown rice as the base.
- Top with baby spinach or mixed greens.
- Add the Vegetables:
- Arrange the cherry tomatoes, cucumber slices, avocado slices, and red bell pepper slices on top of the greens.
- Add the Piri Piri Tempeh:
- Place the cooked Piri Piri Tempeh cubes on top of the vegetables.
- Dress the Bowl:
- Drizzle with olive oil and lemon juice.
- Season with salt and pepper to taste.
- Add a dollop of yogurt or hummus in the center if using.
- Garnish and Serve:
- Garnish with fresh herbs like cilantro or parsley.
- Serve immediately and enjoy a flavorful and nutritious meal!
